Mixed seedy oat cakes

Serves: around 15

Ingredients

1 Cup Oats

4 tablespoons Mix Seed Mix (Flaxseed, Sunflower, Pumpkin, Sesame Seeds and Goji Berries)

3 tablespoons Sunflower and Pumpkin Seed Mix

Pinch of Salt

Warm Water 60 mls

Splash of Olive Oil

Method

1. Pre heat the oven to 170C fan/ 375oF/ gas mark 5.

2. Put the oats in a blender and blitz them. Tip into a large bowl.

3. Add the seed mixes and salt then mix all ingredients together.

4. Add the oil and 60 mL of warm water. 

5. Mix all the ingredients together with your hands until it forms a wet dough. Then leave it to stand for 10 minutes.

6. Place the dough on baking paper and roll it out as thin as you can.

7. You can use a glass as a circles cutter, you'll get around 25 oat cakes.

8. Place in the oven and cook for 20-25 minutes or until lightly brown.These are a great snack option, I like this with hummus or cheese spread. You can keep them fresh for a few days by storing them in air tight container.
