Ingredients

4 Cherry Tomatoes

Thai Red Chilli

Handful Fresh Coriander

1 Avocado

1 Lime for the juice

 

Method

1. Place tomatoes, chilli and a handful of coriander leaves, including the stalks, on a chopping board then chop all ingredients. 

2. Half the avocado length ways and de-stone, scoop out the flesh and discard the skin. 

3. Add all ingredients to the blender and queeze the lime juice over and blend into a smooth paste and its ready to serve.
