Curried tofu scramble

Serves: 1

Ingredients

Garlic flavoured Tofu 125g

2 cloves Garlic

Half an Onion

Half a Red Pepper

Half a Green Peppers

5-6 Mushrooms

2 Tomatoes

Handful of Baby Spinach

Pinch of Chilli flakes

1 teaspoon of Ground Turmeric

1 teaspoon of Garam masala

1 Teaspoon of Cumin seeds

1-2 tablespoons Nutritional Yeast

Salt & Pepper

Drizzle of olive Oil

Method

1. Dice the onion and crush the garlic. Add a drizzle of oil to a frying pan. Add the onions, garlic, turmeric, garam masala and cumin seeds and cook for 2-3 minutes on a low heat.

2. Wash and dice the mushrooms, peppers and tomatoes, add to the frying pan.

3. Crumble the tofu and add it to the frying pan followed by the nutritional yeast salt and pepper to season as desired.

4. Cover and cook for 5-7 minutes

Delicious served with chopped avocado or in a wrap.
