Avocado salad
Serves: 2
Ingredients
4 Lettuce Leaves
6 Cherry Tomatoes
2 radishes
Quarter of a large Cucumber
1 Avocado
Small handful Flat Leaf Parsley
Small Handful Mint Leaves
Half a small Red Onion
1 Large Clove of Garlic
Sprinkle Chilli Peppers
Fresh Coriander for decoration
Drizzle of Lime juice
Dash of Olive Oil
Method
1. For the dressing, mix the crushed garlic, add the chilli with the lemon juice and olive oil and season with salt and pepper. Set aside.
2. Prepare the salad. Wash all ingredients, Chop the lettuce leaves, cut the tomatoes in half, finely slice the radishes and red onions, cube the cucumber, half the avocado lengthways, remove the stone and peel away from the skin and cut into small pieces and place all salad ingredients in a bowl.
3. Toss the dressing mix over the top of the salad, chop the coriander add to the top, stir both into the salsa and season to taste.
