Anzac biscuits

Serves: Around 25 Biscuits

Ingredients

Plain Flour 100g

Caster 100g

Desiccated Coconut 100g

Oat 150g

Unsalted Butter 100g

Boiled Water 50ml

Half teaspoon Bicarbonate of soda

2 tablespoon Golden Syrup

Method

1. Pre heat the oven to 180c/350F/ Gas Mark 4

2. Lightly grease a large baking tray (big enough to hold 12 well spaced biscuits).

3. Mix together the flour, sugar, coconut, and oat n a large mixing bowl.

4. In a small pan melt together the butter and golden syrup.

5. Dissolve the bicarbonate of soda in the boiling water, then add to the butter and golden syrup.

6. Make a well in the centre of the oats mix and stir in the liquid.

7. Place teaspoon sized ball of the mixture on the baking tray and bake for approximately 15-20 minutes. Transfer to the cooling rack as soon as there cooked this will prevent the underneath from over cooking.

8. Store in an airtight container.

I like pumpkin seeds, poppy seeds, linseeds and chocolate chips so I add these to mine!
